Lemon Cream Superfood Chia Seed Pudding

This recipe puts a flavorful twist on classic chia pudding. Our Lemon Cream Chia Pudding packs a punch of flavor and nutrients—while tasting indulgent. It’s loaded with protein, fiber, and antioxidants. This two-part dessert starts with a layer of chia-based pudding and is topped with lemon cream. 

To make the chia layer, you’ll need: 
  • 1/4 cup Chia Seeds
  • 3/4 cup Almond Milk
  • 1/4 cup of Longevity Superfood Blend Cacao Flavor
  • 2 tbsp. Maple Syrup 
  • 1 tsp. Vanilla
  • Zest of 1/2 a Lemon
Instructions: 
Combine all of the ingredients together in a bowl and refrigerate for 3 hours or overnight.
To make the lemon cream layer, you’ll need: 
1 cup of Raw Cashews 
1/2 cup Almond Milk 
2 tbsp. of Fresh Lemon Juice
Zest of 1/2 a Lemon
2 tbsp. Maple Syrup
Instructions: 
  • Soak the cashews in hot water for 1 hour and strain thoroughly. Next, combine all ingredients into a blender and blend until smooth. 
  • Add the chia pudding into a cup or bowl and spread the lemon cream evenly on top. Chill for 3 hours or overnight and enjoy! We hope you love this tasty treat as much as we do!
